I kept low key looking for people talking about cooking in Fun and Games then I realized... There's a place for that.  What have you guys cooked lately that you either really enjoyed the process or really enjoyed the result?

To start last week I made a mushroom bacon creamy pasta that turned out very good.  The sauce was good, but then I dumped too much pasta into the sauce and it wasn't coating the noodles well.  So I put a layer of Mexican cheese (basically just a neutral shredded cheese) on top and covered that with Cajun seasoning and stirred that through the sauce and the noodles till it thickened everything and glued everything together and the cheese became undetectable.  It went really well.  I was very excited.  I just finished the last of the left overs for lunch today.  I had to keep from eating it twice each day.

What have you had fun cooking?  What turned out great?

summer is usually for making ice cream and grilling homemade pizzas, but now i'm working two jobs so it's been more of an "uh do we have any chicken nuggets left" kind of season. but i did my first crab boil tonight, and it was pretty damn tasty if i do say so myself

    I'm always a sucker for a curry!

Katsu, Thai, and Butter chicken are kinda my go-to's because I have the ez pastes for them and I just stick some rice in the steamer, sautéed some veg with soy-sauce and bam, good eats.

One thing I really enjoy cooking but it's super time consuming is stuffed cabbage rolls. I haven't made them in a while tho, might grab the stuff to make them tonight :D

I'm making beef stew.  I used to throw everything in the crockpot but after trying it the old fashioned way with braising the beef first and letting it stew then adding veggies later I've decided it's lots better.  It just means I have to stick close to the stove to keep an eye on it.

I've been too lazy too cook something fancy or when I have haven't thought to post i but yesterday I made my stonery snack/scooby doo sandwhich style monstrosity which is My "microwave nacho burrito".  Take  burrito tortilla and cover a plate.  Put about 1 and a half to twice as much salsa and cheese on the nachos to make some sloppy nachos.  Pick a sturdy chip and don't cook them too long cause you still want some crunch.  Eat nachos.  Then fold over the burrito and eat nacho burrito.

I also recommend taking tater tots and turning them into nachos.

I recently got a rotisserie attachment for my grill so been using that a lot lately.

Once the weather cools down I plan to make a lot of steak pies.

Chicken tacos.  I usually buy the boneless thigh pack but recently it's been more expensive than the breast so had to change.  The breast pack actually is enough to make two meals.  I slice the breast in half, not sure if that would still be considered butterflying.  Cook and then shred.  Toast up some tortillas (because I like them a little crunchy), not too much so that they aren't tostadas.  Put a bit of mayo on them, then chicken and a fresh chopped salsa (tomato, onion, jalapeno, and cilantro). Top with a bit of ranch and green habanero salsa from the bottle. I know might sound gross to some but honestly try it out that way.  The other half of the chicken can be used for bbq chicken sandwiches or something. But especially in these times it's great when you can make alot out of a little.

Its rainy season here in my place.(Philippines)

I remember when I was in Taiwan, during winter season, there is this kind of soup we used to bought at the rolling store.

I was craving for it for few years. I have trouble finding it on YouTube or Google since the name I remember doesn't seem to fit to anything I found on line. And even the recipes aren't the same to what I usually found

Then one day I search again just a "taiwanese soup".

And at last I found it.

    The name is ROU GENG.

Its a bamboo shoots soup with meat balls and fishballs(but the shape isn't balls lol).

So I made it from scratch

I tried to imitate it... And it was a success.. CRAVING SATISFIED

I love to cook anything Italian.   Am I Italian?  No... not at all 🤣  I'm from East texas and we ate beans and cornbread mainly as a kid.

Spaghetti, pizza rolls, chicken alfredo, homemade garlic bread, stuffed mushrooms...

    Love it all!

I've been learning how to cook Mapo Tofu and it's been going pretty well. I love the taste of the spice it has and the aroma it has makes me so hungry for it again.

Oof I made my chicken enchiladas the other day and hadn't made them in ages. They hit the spot.

Then the day after I made chicken wild rice soup which is a good staple. Always amazing.

Might sound weird but try it with stinging nettles sometime. Just Blanche the nettles to get rid of the sting first. Even better for you than spinach apparently.
