    experimenting with the best way to fry battered beef and have it nice and crispy on the outside without it falling apart from the juices in the inside. some chinese restaurants have a nice fried batter on their chicken or beef. any ideas?

    It's dipped in a mix of bicarb and cornflour first, then battered, I believe. find a recipe for silken chicken and it'll give you the principle

    I make ginger beef with the battered beef. Several variations on batter work, make sure you are at least at 350F before you put the beef in the deep fryer.
