    This is my first year planting zucchini (courgettes for those of you who don't speak Murican) and I didn't realize how prolific these little bastards are. The one plant has already yielded three zucchinis larger than my forearm and it's threatening at least a dozen more. what the hell should i do with them all? i left one on a neighbor's doorstep but i feel like some people might take these the wrong way

    I made this zucchini carbonara last year and it was delicious, I've been waiting for zucc season to make it again




    Edit: Another thing I like to make is zucchini parmigiana! I don't have a recipe for it, I normally just sub eggplant for zucchini and enjoy

    ooh that looks amazing, thanks! that might need to be dinner soon...

    I made up kind of a chicken zoodle alfredo thing the other day (not really zoodles, just like zucchini chopped into really long matchsticks and sauteed with garlic) - two servings took one ginormous zucchini (which in this case is a good thing) and the zucchini somehow made it even more decadent yum yum yum

    edit (to the edit) oh hell yes i can't believe i didn't think of that. mr kajal can't eat eggplant (or AUBERGINE if you're a HEATHEN) so this is a win-win-win-win idea

    Oh, yeah, I did that one year, but we only have one little patch of ground right beside the door, and the rotting fruit brought volunteer bugs to go with the volunteer tomatoes :/ someday when i can afford land I'll totally start doing that again tho

    I have some area and last year was horrible didn't believe the store bought commercial tomato will grow BC it was winter time, and I thought they were "good fertilizer" for the soil. I ended up to have 45 vine and roma tomato plants...plus 30 heirlooms

    Also,if you like kimchi, google zucchini kimichi(or vegan zucchini kimichi, w/o fish sauce)

    Ahaha that's awesome! And that's a good idea with the kimchi... though I'm still working my way through the gigantic jar of cabbage kimchi i made (which mr kajal thinks smells like poison, but what does he know)

    Not this recipe but basically every zuchinni baked good has better texture. Think of it a bit like carrots in baked goods or bananas.

    Moist.


    Then fry them in oil or fat and you get crispy outer shell with moist inside. Delicious.

    Good use of excess zuchinni.
