Favorite Cut of Meat

Cow - I personally choose a bone-in beef rib-eye over just about any other cut from the cow. It has all the tender of a Filet Mignon, but with all the fatty flavor of a New York Strip.
Pig - again, I gotta go rib-eye chop.. or maybe a t-bone chop for much the same reasons as above. Tender yet flavorful. Or bacon!
Chicken - Chicken thighs are the ultimate In chicken flavor imo. A well cooked, bone in skin on thing with the fat rendered properly is one of the moistest, most flavorful pieces of chicken possible to cook.

At the opposite end of the beef spectrum, I also love to braise shanks for hours. Makes such a flavorful sauce.
With pork I it's not really a cut but sausage is my preferred style. I'll take just about any kind of sausage but my favorite is krainerwurst. It's so difficult to find I make my own.
Chicken, I really like the stuff that gets chucked. Hearts and gizzards primarily. Love their chewiness and so full of flavor. I also like to make pate for banh mi with the livers.
Venison, I like to use the tenderloin to make schnitzel. -

Pork - belly bbq rub. Slowly ….
Chicken.- quarter leg. With periperi spices.
Most of my meat are done on open wood fire.
I also do like the chicken livers & gizzards. Nice for brunch on weekends. Also with periperi sauce.
And now …. I’m hungry. -
