… or indeed any time of the year! To celebrate a rare glimpse of sunshine in the UK over the Bank Holiday, thought I’d share this:

English Riviera

15ml gin
25ml dry cider
10ml elderflower cordial
10ml lemon juice
Prosecco

Stir the gin, cider, cordial and lemon juice over ice, strain over a wine glass/champagne flute (if you’re feeling sophisticated) and top up with Prosecco.
