Holiday Meals = Pick Your Preference

With the American Thanksgiving this week, many of our thoughts are turning to holiday foods. This prompted me to ask our faction if they prefer the main meat course or the sides. One of my members suggested posting the responses so everyone else could see, but that made me wonder what the rest of Torn would say if asked the same question.
Please feel free to post your favorite dish in the thread and, if you really want to share, post a recipe as well!- Holiday Meals - which is your preference?

Main Course - gimme the meat (turkey, ham, etc.)

I'm here for the sides

I'm making corn casserole but not using jiffy because I feel like it'll make it too sweet and I'm adding green onions.

Living in New Zealand. thanksgiving doesn't exist so we go straight to Christmas. Christmas is during summer here. Usually we just cook up some sausages and steak on the barbecue and make some salads. Pretty basic - but the best :D

Wait, I have to choose? That sucks. I want it all and then go have a nap.
But yeah, Turkey breast will start getting brined late tonight. Only 3 of us here this year. Might not be enough fat drippings for fresh gravy, haven't figured that part out yet.
Sweet potatoes with brown sugar and marshmallows.
Green bean casserole. But fresh! No canned high sodium crap here.
Christmas we go with a rib roast.
Shopping absolutely sucked over the weekend. Glad I'm done. -

People hate on turkey. Personally I only eat turkey once a year and if its cooked properly its delicious and makes great thanksgiving sandwiches and soup. The trick people forget is that the turkey needs to rest for as long as it cooks, not served right out of the oven. Thats how you get a DRY turkey.

Well said. I don't go cutting into anything right away.
Let it rest. Internal temp will continue to rise a few degrees. -

Sometimes it is, but I blame it on the sweet corn that's canned, so we tend to buy bi color corn and freeze it. It's not as sweet. Also I add extra sour cream otherwise sometimes it turns to dry.
