Best Thanksgiving / Harvest Fest Dishes?

    As an American, with a big food holiday just weeks away, I am wondering what your favorite thanksgiving dishes are! And while we call it thanksgiving, I knew there are harvest festivals pretty much around the world. If you're someplace other than the US or Canada, what is a traditional Harvest Fest for you and your favorite dish?

    We go pretty much straight traditional every year with maybe one or two side dish changes. Squash soup to start, turkey and two stuffings, mashed potatoes, beans, brussels sprouts, pumpkin pie, lots of wine. BUT my favorite thing about thanksgiving are home made rolls, which make the best next-day sandwiches, and the next day, and the next. And then I slice em and freeze them so I can have some rolls in case of a comfort food emergency!

    So, I found out yesterday that we are having an early holiday feast tomorrow!! Surprise!

    Typically everything BUT rolls are freshly prepared, lol.

    So the bird has been in a water bath to hasten the thaw. And all out fresh prep today, hopefully I can get the bird brine started by noon so we won't be able to eat until 4-5p.

    Will be using asparagus instead of green beans since I was in a hurry at market last night and didn't like the beans I saw.

    Cranberries get a dash of Cointreau in the pot. Stuffing gets real home made stock, but won't be going IN the bird. Brother in law has plenty of sweet potatoes he dug up last week.

    Cook to temp everyone, not to a timer. Pull it early and let it rest a bit before carving.

    Shout out for Alton Brown! Love that guy.
