Meal Ideas?

My sister and I both work an overnight shift, so it can be hard to convince myself to cook at 4 AM lol. I do enjoy cooking, so that’s a plus. At this point, I’m just looking for some other meal ideas you guys enjoy to make! It gets a little boring making the same things over and over again :)
A few things:
I LOVE using the crockpot. Downfall is- we work 10+ hour shifts and we have annoying cats. So whilst working during the week, I won’t use it. But on off days, I would love crockpot ideas.
Meals with meat are good, but as my sister isn’t a super huge meat eater it can be tough to find other recipes.
We both don’t like mushroom/spinach (unless it’s a spinach quiche!)
So please, I would LOVE to see what everyone else enjoys cooking so I can try to incorporate that into our dinner and lunch times! :) -

Crockpot is always good for things like a nice chuck roast. Sear it before putting it in.
This isn't a recipe exactly, just more guidelines. I usually put a bit of olive oil, seasoning of choice (sometimes steak seasoning, other times being lazy and using a slow cooker spice packet), onions, celery, potatoes. Few hours later, depending on the size of your roast, you have an easy, tasty dinner.
As for fast in general, seafood generally tends to be one of the faster things to cook. Quick easy way to go is to make sure you have clean shrimp on hand. I usually keep a lime cilantro salsa in the pantry/fridge, toss it in there to season them and make rice to go with. Rice in a rice cooker takes about 30 min, if you want it even faster, grab one of the instant rice options of your choice (boil in bag, microwave, frozen ones etc. If you go that route, aim for the frozen rice with veggies. Slightly healthier and you won't need to worry about another side since veggies are with the rice).
But since you like the crockpot... Do you have a pressure cooker? They're much faster than crockpots but you have the same tender tasty sort of meals. -

You should check pinterest for LOADS of ideas on meal prep so your not eating the same thing over and over. I'm always on the search for recipes to change it up and improve my fave dishes. (This being one!) It's great to have without meat, although I usually add in some grilled chicken in at the end. It's super tasty and not too difficult. Depending on who is helping out with prep work, you could knock this dish out in as little as half hour, but could take up to hour and half if left on your own making it. Either way, I highly recommend trying it out! Also, instead of the suggested sauce, I just added some Yoshida's teriyaki sauce/marinade and it was more than adequate! (Edit: By the way, the cabbage used in the recipe is actually bok choy. You can use napa cabbage as well.)
