    I LOVE soups and stews! It is so versatile and filling. You can do so ****ing much with it, and many different variations on the exact same ingredients. It's probably one of the cheapest dishes to make, and it's a great way to get rid of shit that's been clogging your fridge. So what are your favorite soups and stews to make and eat?

    Favorite to Make: Chicken and black bean stew. Holy shit, this is the pinnacle of easy cooking. My recipe:

    can of drained Goya black beans

    can of undrained Goya red beans

    one chicken breast, diced or shredded

    can of Herdez chiles

    Sautee (or boil if you're gonna shred it) the chicken, boil the beans for like 5-10 minutes, toss it all in there together, bring pot to a simmer, chuck in Herdez chiles. Takes less than half an hour and it gives 4 servings. My boyfriend likes his with rice on the side.

     

    Favorite to Eat: broccoli and cheese soup. Soooooo good and delicious. It just makes me want to lay down on the floor.

    I don’t eat cream. I don’t follow recipes either. What I usually do is pick a couple of vegetables (often onions, carrots, celery and tomatoes) and then cut them into tiny, tiny bits and fry it quickly then boil that for a while with Chinese five spice or cinnamon or clove or garlic basically whatever I have. Then I’ll choose a handful of other vegetables and cut them into chunks and cook them in the broth. I’ll often pop noodles in there. Sometimes beans or tofu. Mushrooms, green leaves, broccoli, aubergine, courgette. You name it.

    I live in a small town in China and the fruit and veg shops are very seasonal. So I just tend to go to the shops and buy a good mix of what’s cheap (in season). Very little planning or anything and it makes for a healthy dinner.

    Mines Chicken and corn egg drop soup.

    1 chicken breast boiled to be shredded later

    1 12 oz can of corn

    2 Eggs

    Chicken broth or water, corn starch and salt and pepper. Its perfect for me whenever i feel lazy its easy to cook and done in 30 minutes max.

    Hmm, is that basically hot pot? Sounds awesome. I really enjoy making Asian style meals as I find they utilize more and healthier vegetables.

    no kha for me. I do not like the coconut making it so i dont like Thai curries. I love Nam Tok Nua or Yum Goong.



    I might have spelled the other wrong, it is a greek soup. I eat it a little modified but the concept is there.

    It is a lemon chicken soup with orzo pasta. Usually, they make it creamy using eggs or eggwhites and it is good that way but not when I try to do it so i leave it out. Basic ingredients are chicken, stock, carrot, onion, garlic, orzo, lemon, salt, pepper, oregano.

    Cheesy Potato Soup - Crock pot :

     

     

    READY IN: 5 hrs 15 mins

    SERVES: 6-8

    YIELDS: 2 cup servings

     

    6  large baking potatoes, peeled, cut in 1/2 -inch cubes

    1  large onion, chopped

    1  quart chicken broth

    3  garlic cloves, minced (or pressed)

    1⁄4 cup butter

    2 1⁄2 teaspoons salt

    1  teaspoon pepper

    1  cup  cream or 1  cup half-and-half cream

    1  cup  shredded sharp cheddar cheese

    3  tablespoons  chopped fresh chives

    1  cup sour cream (optional)

    8  slices bacon, fried & crumbled

     cheese, for sprinkling

     

    1 Combine first seven ingredients in a large crock pot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).

    2Mash mixture until potatoes are coarsely chopped and soup is slightly thickened.

    3Stir in cream, cheese and chives.

    4Top with sour cream (if used), sprinkle with bacon and more cheese.





    *****I actually used a bag of hash browns versus regular potatoes. Either way, super good!



    be careful on consumption, too much can lead to constipation xD

    Ooh chili. This seems simpler than it is. I have a hard time making chili that doesn't just taste like beany spaghetti sauce. Any recommendations or tips?

    i make both myself, chili is legit - the right recipe is key... as for broccoli cheese soup - i dont make it myself, but 2 restaurants i frequent make it perfect. As for Chili - i have a recipe and friends or restaurants make it how i like it. Not gunna get precise with it but the basics

    Onions

    Minced garlic

    crushed tomatoes

    ground beef

    chili powder

    paprika 

    chili pepper

    salt/pepper

    kidney beans

    shredded cheddar, pepperjack, and mozzarella (im a cheese lover)

    Oregano

    Olive oil

    ground cumin

    green and red peppers

    white vinegar

    also a bit of sour cream on the side
