    There is a little cheese maker in boscobel, Wisconsin that has a 20yr aged cheddar, that's so sharp my kid were bleeding after I ate it, yum. Sorry kids

    Anything with blue veins in...I also love vintage mature cheddar, something that make your eyes water when you put it in your mouth

    it depends on what i'm using it for ... for example , for salads i enjoy feta or fresh mozzarella , for pasta i like parmigiano and/or pecorino romano

    Extra sharp cheddar, Habanero Jack, Chipotle Gouda.... for chicken recipe - Gorgonzola is really good.

    I love a really, really sharp cheddar and I also like bleu cheese.
    Have you tried Cabrales (bleu)?  Its at the top of my cheese list.  BellaVitano Gold is second.
