My friend *Cough, cough* not me- I'm not a hippy *cough, cough* recently gave up eating meat and would like some advice from people that don't write like chefs do (especially vegetarian chefs- cucumber is not a delicious treat, you f**k face).
I live in a country where meat substitutes aren't really an option. Tofu is an option, but I'm more interested in basic things I can make with straight up veggies.

Cauliflower (whole or part of) in saucepan, cover in water, heat until boiling, turn the heat down so it summers for about 7 minutes. packet of Cheese Sauce mix, follow instructions, can add grated cheese for a more cheesy flavour, Drain the cauliflower thoroughly. Put sauce on top of Cauliflower. (you can faff about putting the lot under a grill or in oven to try brown the cheese a bit, I don't bother.

I'm not against others eating meat, I wouldn't be against me eating it if I hunted it myself, knew it had a good life and a humane death- but I'm just not down for eating animals kept in shitty pens all their life, rolling around in their own shit. Saw a dog being butchered in the street a few weeks back (oh China) and it sort of made me think...
Anyway. What the f**k is the point of lentils? So far my favourite food is deep fried mushrooms. Haha. -

Lots of nice veggo stuff, key to good non-meat meals is not making meaty meals and just removing the meat (as often the meat bit is interesting and the rest is boring af).
Yummy things: (good quality) tofu grilled with tamari, home made or bought fresh paneer (easy to make and easy to get fresh from indian spice/food places), lentil/chickpea deliciousness like falafel or soft dhals. If you have a BBQ then making a tinfoil parcel of veggies plus soy sauce and butter then cooking it on BBQ is fricking nice.
You're not vegan are you? Being able to Dairy makes vegetarian life much easier.
Try to avoid ending up eating lots of bread + cheese for every meal though. This is not a good thing, a delicious thing, but not a good thing. Avoid most fake meat things because they often have no point to them...like fake chicken fillets, WTF...besides this there are some nice things out there like vegetarian hot dogs as they work the best out of all the veggie sausages (IMO) and the veggie mince stuff is nice and versatile so you can still make things like lasagne etc with a meat-free substitute.
Also with meat-replacement things like patties choose chickpea and lentil based stuff...it is much nicer than things that are made mostly of soya...again, IMO.
Not sure if this is helpful at all, easiest to think about what meals you are into eating anyway (or your "friend" is into) and then make substitutes that sort of equate to the things you find delicious about that meal.For the small price $6,969,696.00 I will hand draw you a super shitty forum sig. I do understand your reasoning, It also horrifies me seeing some of the torture these animals put up with. I'm jsut glad I get my own homekill / wild game meat and can make sure they are not treated that way.
Mushrooms? mmmm. They grow on the farm, glorious wild food breakfast. -

I discovered this last night when I went to a 'make your own soup' place (the name works better in Chinese). Normally it's delicious, but last night I just chose a load of vegetables and everything (including the soup) was flavourless. Turns out it's the meat in the soup that gives the whole thing flavour.
I'd totally forgotten about falafel. I'm going to look up how to make it. Roast veggies are also key at the moment. A little cumin and whack it in the oven- boom.
I'm not vegan though I don't really eat much dairy. I eat eggs cause my local shop stocks them from locally owned hens and we can see them running around every day in the street. They have a good life.

You cut a eggplant in half add some cuts to the skin, deep fry until skin is crispy but still fluffy in center. brush a miso sauce on top (1 miso paste 1 Sake 1/2 sugar ratio) and then torch top to give it a caramelized glaze. sprinkle sesame seed and done. Dish name is called nasu dengaku if you want to google a detailed recipe.

I know the Chinese have a different philosophy. But i worked for a slaughter house for about 6 mos. as a teenager. & American methods are so much more humane.. In the old days they just sliced there throat, making it a quick deal. These days we use cattle prods.
How they can sit there & butcher em while still alive is enough to make a grown man cry. ( I did) idk why they cant at least put em out of their misery before they start skinning em. & its sad & weird that they all gather round it like it's just another day in the park..
Not knocking the Chinese. I have inlaws from China that are awesome people. Just that their philosophy on some things are pretty f**ked. How you could eat something after hearing it cry like a lil baby being tortured is to much for me to bear. let alone keep an appetite..
In relation to your subject though. Tonight im making shrimp & vegetable kabobs. shrimp of course.. But if you dont want the meat, which im assuming you dont. Im using portabella mushrooms. red onions, baby potatoes & broccoli.. Will prolly just season it with a lil seasoning salt & some butter. But if you got an imagination the possibilities are endless.
My mom had a vegan kick for a while & she ate a lot of soy burgers.. Surprisingly they weren't that bad. -

While the rice and beans are cooking I saute some onions, carrots and celery. Sometimes also some peppers or cabbage, or both. Other greens are good in there, too. Then when the rice and beans are ready I mix the fried veggies with the drained beans and serve it over the rice. A way to make the rice more interesting is to add olive oil (or your favorite oil) chopped cilantro and lime juice.
Roasted vegetables are wonderful! I like cutting them up small and letting the flavors mingle. If you do it that way, though, you have to pick things that go together well. My husband has some definite preferences. lol I like mushrooms in my roasted veggies, but I leave them in bigger pieces than the other food and add them at the halfway mark when I open the oven to stir it up. That way they won't disappear into nothingness.
Peanut sauce adds both flavor and protein to vegetable dishes and is easy to make. I use one part peanut butter, one part soy sauce and one part hot water. Mix that up real good and throw it in. Oh, and I put a little bit of sugar or honey or something else sweet, too, if the vegetables aren't sweet.

To get enough good fat in your diet (you need fat in order to process the nutrients in your vegetables) be sure to have a few nuts or peanuts every day, or some good quality oil or an avocado. Or, heck, three avocados. -

more ideas:
-Pasta with marinara sauce
-The potato. Oh, the potato. Mashed, fried, baked, it's all good.
-Plain pizza. No extra toppings, no non-sense, just pizza. (not vegan though)
-Spring rolls
-Stir fried broccoli, cauliflower, snow peas, peppers, tofu.
-Falafel
-Tomato soup
-Sweet corn
You can also eat raw foods that you actually enjoy. (Pumpkin seeds, walnuts, nectarines, you know, the good stuff).
Also, oatmeal and corn flakes for breakfast. -

1 medium sweet potato
1 large eggplant
400grm butternut pumpkin
2 large zucchini
500grm sliced mushrooms
1 small jar artichoke hearts (cooked and marinated drained)
2 large capsicums
4 tins diced tomatoes
3tbs dried basil
3tbs dried oregano
2 baby red hot chillis (finely chopped)
4tbs crushed garlic
100grm reduced fat fetta
Thinly slice all the vegetables (except the capsicum, slice it into large pieces off the stem), keep the skin on the butternut pumpkin.
Mix the tinned tomatos with the basil, oregano, garlic and chillis
Layer it into the slow cooker, I did eggplant then sweetpotato then 1/3 tomato mix, then zucchini, mushrooms, artichoke hearts andbutternut pumpkin followed by another third of the tomato mix. Then thecapsicum followed by the final third tomato mix.
Cooked on high for 4hrs then placed diced fetta over thetop, covered with a tea towel then the lid and left to cook another 30mins onhigh.
Makes 12 portions. -

Fry up some beans (anything, canned or not, eg lentils, butter beans, kidney beans, whatever), bunch of onion, any spices.
Do some veggies and shrooms as well, in a seperate pot/pan, with sesame oil or soy sauce or something. You can grate carrot and add it as well, any leftover veggies or capsicum etc you can chop up and put in a different plate to add cold. Maybe some avocado. Again, pretty much anything...
Put it all in a wrap. Add sauce if you want.
Eat forever, vary ingredients as you please.
