    I like to keep it interesting and make random things, so I am suggesting spring rolls!

    Ingredients:

    5 Ounces (1 box) thin rice noodles
    2 Tablespoons soy sauce
    1 lb large shrimp
    1 large cucumber
    1 large carrot
    12 spring roll wrappers (you can find them in any grocery store)
    1 bag of bean sprouts

    Directions:

    Boil water and cook the rice noodles.

    Pour warm water onto a plate and submerge the spring roll wrappers (note* the spring roll wrappers come as hard disc like objects, but after being soaked in water for a few minutes they become loose and rubbery).

    Remove the spring roll wrapper and place it onto a cutting board or other surface.

    Cut your cucumber, carrots and shrimp into long thing wedges.

    Then place them in a line on the spring roll wrapper about 1 inch from the edge.

    After you have added all of your ingredients fold the ends of the spring roll wrapper over, and roll the ingredients as tightly as you can.

    Let it sit for a few minutes until the spring roll wrapper has dried off and serve with either a peanut butter sauce or Siracha sauce.

    Stuffed Quail with Chorizo and Mushrooms , Parmesan Mashed potatoes.

    1 ½ Person portion


    Ingredients:
    • Quail (2pc)
    • Chorizo (75g)
    • Brown/ White mushroom (75g)
    • Egg (1pc)
    • Potatoes (250g)
    • Cream 35% (100ml)
    • Salt& Pepper
    • Nutmeg powder (2g)
    • Parmesan cheese
    • Bacon (4 stripes)
    • Parsley (1 bunch)
    • Butter (15g)
    • Quail Carcass
    • Carrot, Onion, Celery (each 10g)
    Instructions:
    • Cut the Chorizo into small dices, and then prepare Finely chopped mushrooms and place them into the same bowl, Drop Egg whites into them and stir thoroughly until well mixed. Sprinkle some salt & pepper.
    Carve the meat from one of the quail and put them into the food processor.

    Mix them together with the first mixture.

    Stuff the mixture into the whole quail and tie a string on both legs to close it up.


    • Sear the Quail to give it a nice colour outside, sprinkle some salt on the Quail before searing. Let it rest for 5 minutes before putting it in the oven.
      After resting, Put the Quail in the oven for 7-8 minutes 360F/135C

    • With the Saved Quail Carcass, Sear the carcass, give it a nice coloration, dark brown colour. Add in the Carrot, Onion & celery, sweat for 1 minute. Add in Water, Salt, Pepper. Simmer it on low fire for 15-25minutes. When the consistency of the sauce is thickened, it is ready. If the sauce gets too dry you can just add more liquid to it and start again.

    • Cut the potatoes into small dices and boil them for about 8-10 minutes, make sure theyre soft. Mash it through a strainer, place it into a pan. Pour in the cream, add the nutmeg powder and grate a generous amount Parmesan Cheese. And be careful with the salt here, parmesan cheese is salty on its own. The consistency of the mashed potato shouldnt be too wet.



    • Bake the bacon until very crispy

    • Serve the Quail on top of the mashed potatoes and bacon stripes ! Brush the Quail with butter while still hot. Pour the sauce on top of the quail, some parsley to finish. Voila J
