I just made some carnitas tacos w/ guacamole, tomatillo salsa, manchego cheese, and some parsley wrapped up in warm corn tortillas :)

I made a Pho inspired broth with pork and beef and let it simmer away for 4 hours and then rest for an extra 7 while i slept ...
waking up i brought it to a boil again, set the meat aside , then cooked some veggies in the broth (carrots, bok choi, flat green beans) , when those were ready i set them aside as well and cooked pho noodles in the broth ... 2 minutes later boom a BIG bowl of broth , noodles, veggies, some fresh bean sprouts and onion for crunch and, of course, meat .
it takes a long time but is something really easy to do while you're busy around the house doing other stuff ... -
