    whats the easiest and fastest way of using a lot of ammo in a fight?

    Use a minigun and attack someone who you'll stalemate against like chedburntest1. Or pay for losses and only have the minigun equipped

    I have always used my minigun for these missions, you may as well invest in one since there is a easy, hard, very hard and expert mission for the exact same one just higher amounts of shots fired.

    are there any other weapons that have a high ammo count?
    Minigun, 9mm uzi and para lmg are nice ones. And there is some really expensive stuff like dual uzi's available too.

    Defends also count, so if you configure defends with 100% primary, 1% melee, you will empty a clip, reload, empty another and start knifing after that. 3-10 defends should get you to 1k.
