Since I started Torn I have been following Knights guide to crimes and it had been serving me well, however I was recenty put into jail after doing some four nerve bar crimes. Is it wrong for me to follow the guide or is it normal to put into jail every now and then even if you are doing things correctly?

Even players with a lot of crime experience get jailed or hosped once and a while.
But on following that guide: not everyone is the same.
There could be some useful info in there (about skipping certain crimes), but sometimes such guides could do more damage than help your crime exp.
It's best to figure your own path.
Do some higher crimes, if you have a good succeed - fail ratio, continue, if you have a bad succeed - fail ratio, go back.
(And tcbasic.com and torn wiki could also help which crimes you should avoid and which are good to grain crime exp)

Stealing jackets is the only 4 nerve crime you need to do.

Also, Knights guide is old and outdated, things may of changed from then.

Lots of crimes have random reds and browns no matter what your nerve bar is including the nerve 4 crimes. Stealing jackets is 100% green when you can do it.
